Cincinnati Chili (Originally posted 12-19-2006)

If you guys have never heard of it or had it, let me introduce you to Cincinnati Chili! Cincinnatians are devoted to their unusual chili with the subtle cinnamon taste, served over spaghetti with a healthy covering of cheese.

Two restaurants in the greater Cincinnati area serve this flavor of chili. There’s a debate of all Cincinnatians which is better! Some say Skyline Chili some say Goldstar Chili. I personally say Skyline. You can order this stuff in cans also off their websites:

Cincinnati Chili Recipe:

Ingredients:

1 1/2 lb lean ground beef

1 (29 oz can) tomato sauce

1 (14 1/2 can) peeled whole tomatoes

Small onion, chopped

1/2 tsp cinnamon

1/2 tsp allspice

1 tsp salt

1/2 tsp pepper

1 1/2 Tbsp white vinegar

1 toe garlic

3 bay leaves

Directions:

Brown meat-cook onions with meat-drain grease. Place meat & onions in large pan or crock pot. Add rest of ingredients. Cook slowly 4-5 hours, covered. Remove bay leaves and garlic before serving. Serve on a bed of spaghetti and top with grated chedar cheese. Serves 6-8.

If you guys have never tried this you have to! It is so good and rich! Coca-Cola and chocolate in a cake! What could be better?

COCA-COLA CAKE

INGREDIENTS:

* 2 cups self-rising flour
* 2 cups sugar
* 3 tablespoons cocoa
* 1 cup Coca-Cola
* 1 cup butter
* 1 1/2 cups miniature marshmallows
* 2 eggs, beaten
* 1/2 cup buttermilk
* 1 teaspoon baking soda
* 1 teaspoon vanilla extract
* .
* Frosting:
* 1/2 cup butter
* 1 tablespoon cocoa
* 6 tablespoons Coca-Cola
* 1 box confectioner’s sugar, (1pound)
* 1/2 cup chopped pecans

PREPARATION:
Grease and flour a 9 x 13-inch pan and set aside.

In a large bowl combine flour and sugar. In a saucpan combine the cocoa, Coca-Cola, butter, and marshmallows; bring to a boil. Combine the boiled mixture with the flour and sugar mixture.

In a separate bowl mix eggs, buttermilk, baking soda, and vanilla; add to the first mixture.

Pour into prepared pan and bake at 350 degrees for about 35 minutes, until cake tests done.

Frosting: In a saucepan, bring butter, cocoa, and Coca-Cola to a boil. Stir in the sugar and mix well. Stir in nuts. Spread over the cake while both cake and frosting are still warm.
Serves about 16.
